Turkey tends to get all the attention at Christmas time, but there are plenty of other meals between then and New Year's Day. Gammon is a fantastic choice for hearty seasonal meals, so grab our Smoked Oil and try this super tasty classic.

Ingredients
- 2kg unsmoked gammon joint
- 4l ginger beer
- 2 tablespoons of mulling spice mix
Glaze:
- 1 tablespoon of Fussels Smoked Rapeseed Oil
- 2 tablespoons of white miso paste
- 6 tablespoons of honey or golden syrup
- 1 tablespoon of Dijon mustard
- Juice from 1/2 orange
- 2 tablespoons of dark rum
Method
Place the ham in a large pot and cover with the ginger beer.
Add the mulling spices and bring to a boil.
Turn the heat down and simmer gently for 2 hours.
Preheat the oven to 200C.
Carefully lift out the joint out of the beer and score the skin, place in a baking dish and brush with the glaze (including our Extra Virgin Rapeseed Infused Smoked Oil!)
Place in the oven and bake for 40 minutes, pouring more glaze on every 10 minutes.
Turn the heat up to 220C for the last 10 minutes to get a nice crunch on the skin.
Leave to rest for 10-15 minutes before slicing.
