Strawberry Gazpacho

Ingredients

• 1 small cucumber or 1/2 of a large one
• 3 sticks of celery
• 250g strawberries
• 1 red pepper, stalk and seeds removed
• 1 teaspoon of balsamic vinegar
• 1 tablespoon of Fussels Extra Virgin Rapeseed Oil
• Large pinch of salt
• Pepper
• 1 sprig of fresh oregano, leaves picked and stem discarded
• 2 sprigs of fresh parsley
• 1 sprig of mint

Method

Blend all the above reserving 1 strawberry as a decoration.

Pour into a bowl, decorate with a sliced strawberry and chopped chives.
