Ingredients
Blueberry mint and feta salad
- 1 radicchio (or salad leaves of your choice)
- Large handful of fresh blueberries, washed
- 50g chopped feta cheese
- 2 small sprigs of mint chopped
- 1 teaspoon of chopped chives
Dressing:
- 1 tablespoon of honey
- 1 teaspoon of white wine vinegar
- 1/2 teaspoon salt
- 2 tablespoons of Fussels Chilli Infused Rapeseed Oil
Method
Combine the all the dressing ingredients and leave to one side to infuse.
Wash and slice the radicchio and combine with 2/3 of the dressing, place into a serving bowl.
Top with the blueberries, feta, herbs and remaining dressing.
