Lemon Ricotta & Garlic Mushrooms on Toast

  • 2 slices of toast
  • 150g ricotta
  • Zest from 1/2 lemon
  • 2 large pinches of ground black pepper
  • 2 large handfuls of spinach (or any other seasonal greens), chopped
  • 150g mushrooms, sliced
  • 1 tablespoon of Fussels Garlic Rapeseed Oil or Lemon Rapeseed Oil (We love using both our lemon oil and garlic oil for cooking respectively!)
  • 1 teaspoon of soy sauce


Preheat the garlic infused cooking oil in a frying pan and add the mushrooms and cook until golden.

Pour the soy sauce in the pan and make sure the mushrooms are coated.

Add the greens until they are wilted.

In the meantime - toast the bread and combine ricotta with the lemon zest and pepper.

Top the bread with the ricotta, greens and mushrooms.
