Ingredients
- Black rice soba noodles, cooked
- 1 tablespoon of Fussels Garlic Rapeseed Oil
- 1 aubergine, cut into 1 cm cubes
- 1 mango sliced or cubed
- Salt and pepper to taste
- 1/4 teaspoon of chilli powder
- 1 teaspoon of smoked paprika
- 1 tablespoon of tamarind (or soya sauce)
- 1/2 tablespoon of honey
- 2 tablespoon of tomato puree
- 1/2 tablespoon of chopped fresh oregano
- 1 tablespoon of chopped fresh coriander
- 1 teaspoon of chopped fresh mint
Method
Cook the black rice soba noodles and cool.
Fry the aubergine in oil with the salt until tender.
Add the spices and tomato puree.
Add the mango and herbs (reserving a few for decoration) and combine with cooked noodles.
