Ingredients
- 50ml of Fussels Extra Virgin Rapeseed Oil
- 8 Maris Piper or King Edward potatoes
- Salt
Method
Peel and quarter the potatoes.
Preheat the oven 220C.
Add the oil into an oven dish that can contain all the potatoes and pop into the oven.
Boil the potatoes in salted water for 8 minutes.
Drain the potatoes and shake vigorously in the colander to roughen the edges (this will help them to crisp up in the oven).
Carefully pour the potatoes into the hot oil, shake gently and return to the oven.
Turn the oven down to 190C and bake for 50 minutes, turning a couple of times during that time.
Serve sprinkled with a little more salt.
