
Ingredients
Pancake Mix (8 pancakes)

Fussels Extra Virgin Rapeseed Oil for frying
- 250g self raising flour
- 1 tbsp caster sugar
- 1 tsp salt
- 1 medium egg
- 300ml milk
Toppings
- Strawberries and blueberries (or your favourite)
- Peanuts for added crunch
- Your favourite syrup
Method
In a large bowl, sift the flour, sugar and salt, mix well.
Wisk the egg and milk together, then combine with the dry ingredients, mixing with a wooden spoon.
In a non-stick pan, heat a little Fussels oil and add 2-3 spoons of mixture.
Let the mixture spread in the pan.
After a couple of minutes, when a few bubbles appear, flip over with a spatula and cook for a further couple of minutes.
Repeat the process for the other pancakes.
Top with berries, peanuts and syrup!
