The perfect dish for a lazy brunch.

Ingredients
- 100ml of Fussels Extra Virgin Rapeseed Oil
- 2 free-range eggs
- 3 onions, sliced
- 120g plain flour
- 1 tsp ground coriander
- 1 tsp cumin seeds
Method
Beat the eggs in a bowl.
Add the onions, flour, ground coriander and cumin seeds and stir well to combine.
Heat the Fussels Extra Virgin Rapeseed Oil in a deep-sided frying pan over a medium heat.
Shape the mixture into patties and drop into the hot oil and fry for 2-3 minutes, turning half way through until golden-brown.
Remove and drain on kitchen paper.
Repeat with the remaining bhaji mixture, replenishing the oil in the pan if it runs low and allowing it to heat up again after a new addition.
Serve with a fried egg, yoghurt, hot sauce herbs and greens.
